This is my first ever recipe going over this blog, starting with hateful beetroots.
Beetroot is really under appreciated vegetable. Many of us didn't want to eat it because of its earthy texture, smell and taste (including me), but we all know that it is one of the most beneficial vegetable on earth.
Our moms are done telling us so, but dare we eat this.
I myself hated it since childhood but looking at its benefits and continuous exposure, I have found ways to somehow incorporate it in my diet. It can be part of masala dosa filling, some rice dish, soups, smoothies or dips.
Today, sharing with you, is this delicious recipe of beetroot raita which is full of antioxidants.
Beetroot give it a beautiful pink color which makes it irresistible to dive in. It almost look like melted ice cream to newbies but hello, its healthy beetroot......surprise....surprise.
Beetroot Raita Recipe
One Beetroot, peeled, grated
Half Radish, grated
One tomato, small, grated
Two cup(250ml) plain yogurt
Salt, according to taste
One tbsp Chat Masala
In a big bowl bring all the ingredients together and give it a good whisk.
Check for salt and chat masala and adjust according to the taste.
Don't use very sour yogurt.
For extra punch you can add pinch of white pepper.
This dish could be enjoyed as a dip with your snacks or as a side with main course .Don't forget to serve it straight out of the refrigerator.
