All must have witnessed fluffy cinnamon rolls but these ones are crispy versions inspired by Indian "Bhakarwadi". I like these much more than fluffy ones as these could be easy to munch on whenever you like. Make it bite-size and its good to go for your snacking game.
Cinnamon is good for winters and its heavenly smell is mesmerizing. This Diwali you could go for these beauties apart from regular Gujiyas and laddoos.

So without wasting any time, let's start with the recipe
Crispy Cinnamon rolls
Ingredients
For Dough
2 cups all-purpose flour
Half cup Melted Butter
2 teaspoons Active dry yeast
125 ml Milk
2 teaspoon Sugar
Pinch of salt
2 tbsp oil
For cinnamon sugar
2 tbsp Cinnamon powder
2 tbsp Castor Sugar
For glaze
4 tbsp milk
2 tbsp sugar
Milk wash
2 tbsp milk
2 tbsp melted butter

Direction
Dough preparation
Activate the yeast by putting it in warm milk and adding sugar to it. when the solution turns frothy it is ready to use.
Take all-purpose flour in a bowl, make a hole in between and add yeast solution to it. Now add melted butter, salt and mix with a whisk. Now use your hands to combine all ingredients and prepare a dough.
Brush the dough with some oil and keep it for proofing by covering it with a damp cloth in a warm place. It will take about 60-90 minutes depending on the weather conditions.
Rolls preparation
After proofing is done (i.e. Dough is double in its size), punch the dough to release air and knead it again.
Now roll it in a rectangular thick sheet.
Apply room temperature butter all over the sheet
In a small bowl mix castor sugar with cinnamon powder, now dust this mixture with the help of a sieve on the sheet.
Fold the dough from the top in a cylindrical shape so that it takes the form of a roll.
Mark equal distance and cut the roll in equal size.
Start Placing rolls on a baking tray.
Cover the tray with a damp cloth and again leave it for half an hour for second proofing. They will rise in their size.
Prepare a milk wash by mixing melted butter with milk. Brush this mixture on the rolls. It will give them shine.

Baking the rolls
Preheat the oven at 180-degree celsius for 15-20 mins. Now Pop the tray in the oven and bake the rolls at 180-degree celsius for 20 mins or till it gets nicely brown.
Meanwhile, prepare the glaze by adding castor sugar to milk till u reach a glazy and smooth pouring consistency. Add vanilla extract to it.
Let the rolls cool down. Now add the prepared glaze on top of it.

Ready to take a bite.
Note
This recipe goes for fluffy rolls too if you proof them for long and use more yeast.
You may top it with whipped cream for more luxury feel
Cinnamon rolls are everyone's favorite but I am sure these crispy ones will give you that missing crunch.
